Crystal and Cara Malts are so named for the caramelisation and crystallization of the sugars present in the barley kernel.  Crisp take green malt from germination and apply heat while maintaining the moisture content so they are able to liquify the endosperm of the barley, transforming the starch into sugars.  Heat is then applied and the caramelisation begins.  In the case of Crystal Malts, when the endosperm cools, sugar crystals are formed. When you cut across the grain the glassy sheen of crystalized sugar can be seen.  Each Crystal Malt imparts a clean, nutty, caramel-like sweetness to your beers.

Ella™ CULTIVAR NUMBER 01-220-060 was born in Victoria in 2001. Early appearances revealed strong floral, noble hop character complemented with a delicious spicy finish. 

Ella™ produces medium to large hop cones that have a strong floral flavour with a deliciously spicy finish. Pare her back for subtle notes of floral and spice that work well in a variety of lagers, or let her loose for a big tropical flavour that is made for highly hopped styles.

In their second life, they were used to hold and mature some of the country’s most celebrated Tawney (Port) for many years.

3rd Life:

After they had served their time maturing sweet fortified Tawny, they were sent down to the Tasmanian Cask Company where they were hand coopered into smaller barrels for a local whisky producer, along with receiving a shave and generous charr. In their 3^rd life, they held and matured Tasmanian whisky from a producer that has won the highest awards locally and internationally for their whisky.
