Geraldton Wax Bextract™ | Chamelaucium uncinatum is a supercritical C02 extract from native Geraldton Wax for use in the food and beverage industry.  

The Geraldton Wax Chamelaucium uncinatum is an iconic native Australian shrub, endemic to Western Australia and historically prized as Australia's most economically important cut-flower export. For decades, it was predominantly known for its long-lasting, star-shaped ornamental blooms.

While Indigenous Australians have long appreciated the plant, its role in the contemporary food and beverage industry is a relatively recent development. The leaves, and to a lesser extent the flowers, of certain varieties have a distinct zesty, citrus flavour with notes of kaffir lime, lemongrass, or lemony pine needle. This has led to the plant being championed in the Australian native food space as an emerging flavour powerhouse. The current culinary use, including using the leaves similar to rosemary in sauces, stocks, and especially in botanical gins and other beverages, has largely grown in popularity in the 21st century. Dedicated research and development are now focusing on commercializing strains, like the 'Jambinu Zest' variety, specifically selected and bred for their optimal edible properties and intense citrus flavour profile.

Usage Guidance:

Pre-addition preparation:

Warm to 25oC in bottle as supplied and shake well. Placing in a sink of warm water is an easy way to do this. Extracts are 85% ethanol and are flammable. Do not heat with a microwave or other direct heating source.

  • Typical addtion rates: 0.15 to 0.3g per Kg of beverage (0.015% - 0.03%)
  • Note: Recommended addition not to exceed 3g of Bextract™ per 1Kg of finished product
  • Add as close to kegging/bottling/canning as possible to maximise aromatic retention in finished product.

Addition Suggestions:

Add Bextract™ directly into a high shear environment (high shear mixer or pump inlet via venturi).

Usage Examples:

  • Premium alcoholic and non-alcoholic beverage. Great in a Gimlet cocktail! Post distillation addition to gin and other spirits.
  • Addition to ice cream, sorbet, chocolate and pastry products.
