1st Life:

These barrels started their life as Oloroso and Cream Sherry and Pedro Ximénez barrels in the world-famous wine-growing region of Jerez, Spain which is situated in a triangle of land formed by the towns of Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María where they held fortified wine for many years.

Oloroso sherry casks are highly sought after by the whisky industry. It adds a lot of richness when spirits are matured in casks that were seasoned with Oloroso.

Cream sherry is a semi sweet wine which is obtained exclusively from oxidative ageing and involves blending the Oloroso (in what is known as cabeceo) with an amount of Pedro Ximénez, hence it being commonly known as Sweet Oloroso.

Classic Pedro Ximénez will display aromas and flavours of raisins, dates and dried figs, often combined with a spicy note and chocolate.
