Nutmeg is a very popular spice made from drying the seed gradually in the sun over a period of six to eight weeks. Nutmeg is known for its nutty slightly sweet flavours with a strong and distinct aroma with notes of clove.  Used commonly as a spice addition to rum.

Nutmeg is a spice made from the seed of the nutmeg tree (Myristica fragrant), a native Indonesian evergreen tree that is the source of two popular spices: nutmeg and mace. Nutmeg is the inner seed, while mace is the red, lace-like substance that covers the seed.

Nutty and slightly sweet, nutmeg is an intense spice that has a strong and distinct aroma. For those who are more sensitive to heat, nutmeg might seem almost spicy.

Growing on the Myristica fragrans tree, it was once the most expensive spice in the world, and only available through the Dutch East India Company’s monopoly. It’s no surprise, that we see nutmegs begin to appear in elite Dutch cuisine as early as the late 15th century.

Once a spice to show off one’s wealth, cultivation outside of Maluku has made it more affordable in modern times. But the captivation of nutmeg’s unique camphoraceous, woody, gentle spice remains.
