Cloves are a spice made from the flower buds of an evergreen tree, the clove tree (Syzygium aromaticum). Clove flower buds are harvested in their immature state and then dried. Cloves have a very strong, pungent flavour and aroma. Deriving from the compound eugenol.
Eugenol is the main bioactive compound of clove, which is found in concentrations ranging from 9 381.70 to 14 650.00 mg per 100 g of fresh plant material. Eugenol is described as having a woody, spicy aroma. With regard to the phenolic acids, gallic acid is the compound found in higher concentration (783.50 mg/100 g fresh weight).
Cloves have a sweetness, bitterness, and astringency, with a noticeable amount of heat. Similar warm spices include nutmeg, cinnamon, and allspice. A great addition to your gin or spiced rum.
