Dosage Rate:
- 0.75 to 1.5g/L or (0.75-1.5kg per 1000L), the higher recommended dosage rates are for fermentations that are exceeding 8% ABV or have a significant percentage of the fermentable sugars as refined sugar, i.e. >50%.
Usage Guidance:
We recommend not using straight 100% black strap/C grade molasses or molasses that has a sugar content of < 65% of total dry substances*, modern black strap by itself is too harsh for most yeasts. If wanting to use this kind of molasses, supplement the fermentable sugar content with at least 50% refined sugars. Refined sugars include white
sugar syrups, white sugar, raw sugar, light or dark brown sugar, etc.
1. Dissolve Cane Molasses/refined sugars in hot or warm water to create wort.
2. Add Rum nutrient to the made-up wort and dissolve
3. Add Rum El Gusto yeast with temp control set for 33C (max).
*ask for a copy of the Certificate of analysis for the batch you are buying and divide total sugars over total dry substances.
