American Oak Fans - Balance AB - 2.0M2

American Oak Fans - Balance AB - 2.0M2

$179.95

American Oak Fans (oak staves) offer controllable oak-integration.  American oak with plenty of impact: Barrel-like oak contribution with toast, charcuterie and vanilla characters.

This oak has the ability to highlight bright red fruit aromatics as well as underpin darker fruit on the palate. The fire-toasted oak provides depth to the mid-palate as well as line and length.

Lots of impact. An alternative to a new, toasty American oak barrel.

These American Oak Fans are approximately 910 mm long, 40 mm wide and 10 mm thick.

Toast: - Fire

Oak: - Quercus Alba

Aromatics: - Sweet, toasty oak and vanilla.

Flavour: - Toasty cedar oak with hints of char and vanilla.

Mouthfeel:

- Structural oak, with lots of impact for length.

Lots of oak impact here – cedar, toast and vanilla impact.

Recommended Applications

The ‘fan’ pack can be used during alcoholic and malolactic fermentations as well as for maturation applications. The surface-to-volume ratio provides optimum control over the transfer of oak flavours and characteristics.

The pack has been designed for easy installation across small to medium sized tanks (i.e. as small as 1000L and up to 25kL tanks.

Applications of between one square meter and three square metres per 1000 litres of wine delivers the required integration sought by winemakers.  Trials are still underway with Brewers and Distillers and we welcome your feedback on dosing levels to feedback@BeerCo.com.au

The surface area/weight ratio of these ‘fans’ provides for moderate uptake of oak flavours.

Single use for medium to long term extraction time has delivered low integration rates across six-to-12 months.

Multiple use aimed at short-term extraction times can also be managed for high extraction across a shorter timeframe (one-to-three months).

Please note: The dosage rates are recommendations only and individual trials according to grape varieties, liquid (beer or spirit or wine) and desired outcomes are highly recommended.

Pack Sizes:

- 2 metre square Oak Fan
- 910 mm long x 40 mm wide x 10 mm thick staves
- 22 staves per fan pack

Seasoning

The oak is seasoned at the mill in North America for two winters, where it receives an annual precipitation of 1600mm (plus snow) prior to shipment to our cooperage in the Barossa. The oak then spends another two-to-six months in our seasoning yard for further conditioning, which further enhances the unique properties, and to stabilise the moisture content.

Technical Specifications

Complete with stainless steel wire and carabiner (snap hook) for securing to existing rings, lugs or the tank lid. No assembly is required.  The dry weight of each pack is between 5.1 and 5.3Kg per pack

Hops:

- 35 gm Saaz CZ Hops - Alpha: 3.2% – 30 minutes from end of boil (start of boil)

Yeast:

- Lallemand Brewing WildBrew™ Philly Sour Yeast 2 x 11g Sachets

Adjuncts:

Add 10 mins from end of Boil.

- 7g fresh ground Coriander Seeds
- 14g Sea Salt
- 2Kg of Diced Frozen Mango (thawed) added to the secondary

Aids:

- 1 tab of Deltafloc or 1 tsp of Irish Moss

Method:

- Mill the grains, and mash in with a generous 3L to 1Kg of grain ratio and allowance for any false bottom in your mash tun (approx. 15 Litres).  Note: the high ratio of Wheat Malt 50% will require stirring to avoid a stuck mash and sparge.
- Target mash holding temperature of 64 °C.  Hold the mash temperature for approximately 60 minutes or until the conversion is complete.
- Raise the temperature of the mash to 76 °C and begin sparging with 77 °C water until you collect 25 L of wort in the kettle.
- Boil for 60 minutes. 30 minutes into and from the end of the boil, add your scheduled hop addition. When there are 15 minutes remaining in the boil, be sure to add your Irish moss or Deltafloc tablet to help with precipitation of the hot break.  At 10 minutes remaining, add both the ground coriander seed and the sea salt.
- The coriander seed you add should be fresh and freshly ground. You may even want to toast the seeds in a dry pan for 5–10 minutes like the chefs do to bring out the essential oils.
- You can correct low levels of salt or coriander in the keg or bottling bucket — another reason to start at the low end.
- Cool the wort to 25°C, transfer to your fermentation vessel and aerate the wort adequately. Add the contents of your yeast starter to the chilled wort. Ferment around 27°C to accelerate lactic acid production and accentuate the fruit esters in the Philly Sour Yeast until the final gravity is reached, which should be in 5 to 7 days.
- As fermentation wraps up, thaw and refreeze the mango two or three times to help break down the fruit cell walls. When fermentation is complete, add the thawed mango and let it sit in the fermenter for five days.
- Cold crash for two days and ensure fruit has settled at the bottom of the fermenter before packaging
- Package it up and carbonate to 2.75 volumes of CO2 - much like the Berliner, a Mango Gose this should be a highly carbonated, "spritzy" beer!

Food Pairing Suggestions:

- Cheese - fresh chevre and young Asiago's
- Seafood - shrimp and scallop ceviche with mango salsa
