Here's the latest in our 'brews from a mate series' of winning home brew recipes from us to you to brew! Can you brew it? We are pleased to share a wonderful Belgian Trappist Single ale homebrew recipe from a master homebrewer of great fame in the Lockyear Valley.  Having tasted some of the Anthony's awesome delightful hoppy ales and an incredibly complex subtle sour ale brewed by Anthony & Mitch & Peter @Toowoomba Homebrewers we could not wait to share a recipe from a grand master homebrewer who has tried no less than 35 different Belgian ale yeasts on his way to perfecting his "Anthony's Single No More" Trappist Single Ale recipe which is a wonderful drop to drink on a summers day or any day to be exact.  We hope Anthony forgives us for our grandiose naming of his Trappist single as a big congratulations due to the brewer on his own wedding nuptials in 2015 :-) where we have it on good authority the wedding guests were very happy with the beers brewed by the groom for one and all!  If you see this fella around make sure you ask him to share one of his brews with you.  He is doing more than his fair share of heavy lifting as we all seek to rid this rotten world of beer poverty one good brew at a time - cheers Anthony - keep up the great work mate!  And if you are in the mighty Lockyear Valley make sure you drop into the mighty Toowoomba Homebrewers to find out more than just a little about how to brew great beer! Some Brew Q&A behind the brewer before we get to his magic recipe: Q: When did you first start homebrewing? A: I first started home brewing with kits in 2003 as a cheap way to make booze whilst doing a chefs apprenticeship Q: What got you into it? A: I got the all grain bug about 4 or 5 years ago after a good kiwi mate got me to try Monteith's Original Ale  I was from then on hooked on craft beer Q: What’s the most common fault you see homebrewers make? A: Trying to over complicate recipes. Some of the best beers I have brewed and tasted have had a very small list of ingredients. Q: What are your favourite styles to brew? A: I like to brew everything but like most people these days I like my hops pale ales are my go to summer beers light on the crystal and easy on the IBUs to make them very sessionable Q: What’s coming up at Toowoomba Homebrewers for you and your customers? A: We are looking at pushing out a few big IPAs and testing out the new brew rig and see how much malt we can squeeze in her.

Gladfield Malt Bill:

Hops:

  • 13.6 IBU 25 gm (0.81 oz) of Styrian Goldings 5.40% A/A @60 Minutes - you could use Fuggles
  •  0.0 IBU 15 gm (0.53 oz) of Styrian Goldings 5.40% A/A @0 Minutes (flame out) - you could use Fuggles

Yeast:

Brewing Aids:

  • 4 gram of Polycar Brewbrite into the boil @10 mins
  • 1 tsp of Yeast Nutrient into the boil @10 mins (you could use a capsule of Servomyces Beer Yeast Nutrient)

Mash Profile:

  • 5 Step Boh Pils Profile
    1. add 22.43 qt of water / 21.23 litres @ 122 F / 50 C for 10 mins - step time 10 mins
    2. heat to 140 F over 4 mins / 62 C - step time 20 mins
    3. heat to 149 F over 4 mins / 65 C - step time 25 mins
    4. heat to 158 F over 4 mins / 70 C - step time 20 mins
    5. heat to 171 F over 4 mins / 77 C - step time 10 mins (mash off)
  • You could alternatively do a single step infusion mash @67 C recommended single step mash for Gladfield Malt in this style

Sparge:

  • Fly sparge with 3.03 gal water at 168 F / 11.5 litres of water at 76 C

Fermentation & Storage & Serving:

  • Two stage Ale ferment - we will leave you to pick what works best for your brewery
  • Keg or Bottle carbonate to 2.3 volumes of C02 age for 30 days and serve in a delightful Belgium goblet glass - cheers!
