Crisp Flaked Torrefied Rice consists of rice grains that have been cooked at high temperature, resulting in gelatinisation of the starchy endosperm, and then flaked. It lightens wort colour, reduces protein levels and imparts a characteristic dryness to finished beers.

Rice has low gluten so can be used for crafting low gluten products.

Sulis English Lager | Bath Ales

Darren James (DJ), Senior Brewer Bath Ales – United Kingdom
“We use flaked rice in our new English Lager Sulis with great results. Using it we are able to create a lager that is very light in colour, clean, crisp, medium bodied and slightly dry in finish. Crisp flaked rice helps bring out all these flavour profiles without imparting strong flavours or adding colour. The rice adds a smooth, clean body and mouthfeel with a dry finish too, making Sulis very easy drinking.”

So light and easy

I use 20-25% of this in a hopped rice lager, along with 2-300G of acidulated malt and the remainder all Pilsner malt, ferment with any lager yeast, pretty much on tap all the time on my beer fridge, a perfect easy drinking lightly hopped beer.
