Method:
Preparation (Day Before or Brew Day Morning)
- Clean and Sanitize: Everything. Seriously. Sanitize your fermenter, chilling equipment, hydrometer, mash paddle, and any spoons or hoses that will touch the beer.
- Hops Prep: Measure out all your hops into labeled containers. This hop schedule has a lot of moves; being organized is essential.
- Water Preparation: If you are using GWW (Greater Western Water) or similar soft water, prepare your salt additions now.
Brew Day Run Sheet & Timings
1. Water & Mash

Mash Target: Single Infusion at 67°C for 60 minutes.

Mash Out: Raise to 75°C for 10 minutes prior to lautering/sparging.
2. Boil & Kettle Additions
-
Bring wort to a full rolling boil for 60 minutes.

Add 45 g Tettnang at 60 minutes.

Add 30 g Tettnang at 20 minutes (add kettle finings / yeast nutrient at 15–10 min if desired).

Add 25 g Tettnang at 5 minutes.

Flameout: Chill wort rapidly to pitching temperature (10°C – 12°C).
3. Fermentation & Lagering

Primary Fermentation: Pitch 2 x sachets W-34/70 or 1 x pouch Bluestone Pilsen at 11°C – 12°C. Hold temperature until gravity reaches ~1.020.

Diacetyl Rest: Raise fermenter temperature gradually to 15°C – 16°C over 2 days; hold for 3–4 days until gravity stabilizes at 1.012.

Cold Crash & Lager: Drop temperature down to 1°C – 2°C and lager for 3 to 4 weeks until crystal clear [You might prefer to do this in the Keg or at the very least rack off the yeast].
4. Packaging

Transfer ~19.0 L of finished beer into a pre-purged 19L Corny keg.

Carbonate to 2.4–2.5 volumes of C02.
