The 2-row winter barley varieties that go into Crisp Best Ale Malt have been planted in the light, sandy soils of North Norfolk, United Kingdom. Crisp source the lowest nitrogen barley from their farmers.During malting, high cast moistures and a balance of optimal germination time and temperature results in an even, well modified malt with a rich colour and balanced sweet, malt flavour which is ideally suited to ale brewing.

OYL-004 West Coast Ale I is popularly known as the “Chico” strain.  OYL-004 ferments crisp and clean with light citrus notes under 19°C.  Highly versatile and popular neutral foundation for a variety of malts and hops, commonly used as a house strain. This strain also has a highly attenuative and moderately flocculating.

Try Omega DIPA (OYL-052) or British I (OYL-006) to highlight hops more, or West Coast Ale II (OYL-009) and Scottish Ale (OYL-015) for malt displays.

Omega Yeast's metabolically healthy cells produce vigorous fermentation and consistent results for home brewers and probrewers alike.  Each homebrew pack (150ml) is packed with  225b cells.

Cinnamon is a spice made from the bark of species of the cinnamon tree.  Cinnamon has a warm, woody, sweet citrus  flavour and pungent aroma likened to that of cloves.

Cinnamon is one of the most used spices around the globe. Arab traders enchanted Europe first with cinnamon while keeping the supply limited. Consequently, the spice became a status symbol in Europe, which only the rich could afford. The Arabs, ever indefinite where they retrieved the luxury spice from, were always making sure to preserve their monopoly to justify the elevated prices. Many European explorers left the continent in an attempt at finding the mysterious source of cinnamon. Portuguese succeeded first by finding the island of Ceylon, presently known as Sri Lanka.

The treasure was a small evergreen tree, reaching between 10 and 15 meters. During the harvesting period, the inner barks are laid in the sun to dry and roll into the well-known curled cinnamon sticks. The spice compliments well with sweet and salty flavors.

Cinnamon is used as a flavouring in cinnamon liqueur, such as cinnamon-flavoured whiskey in the United States, and rakomelo, a cinnamon brandy popular in parts of Greece.
