Method:

  1. Water: Collect water and acidify to < 4.0 pH range using either Phosphoric Acid, Lactic Acid, Citric Acid or Malic Acid or Ascorbic Acid.  Most recipes recommend in the range of 3.2 - 4.0 pH with 3.6pH being a great mid-point.  It is important for food safety and to make the Hop Water crisp and refreshing to have a pH below 4.6.  You can shoot for 4 pH or below using lactic or Phosphoric Acid at about 1 gram per 4 Litres, so 5-6 ml of Phosphoric Acid or 3–5 g Citric Acid should get you there if you do not have a pH meter.  Your source water may differ, so a pH test is highly recommended. For an additional flavor boost, you can also try adjusting pH with fresh lemon or lime juice.
  2. Add: 2-4g of Calcium Chloride.  Optional: Adjust water profile Chlorine level to be 2:1 higher chloride to sulphate levels) 
  3. Boil: Bring your water to a boil for five to 10 minutes to deaerate, then quickly chill to 76°C for a 10 minute whirlpool/hop stand.  Add 30g of each hop. Cover and hold for 10 minutes before immediately cold crashing to fermentation temperature: 18 - 22°C (64 - 72°F).
  4. Hop Additions and Biotransformation: There are many different ways to get your Hops into your LupoWater.  Our recommendation is as follows but feel free to exBeeriment with others like Hop Dipping, Cold Steeping, Hop Teas, etc. More information in the articles/videos/links below the recipe guidance. We are going to target a starting bitterness of 10-12 IBUs in the whirlpool/hop steep and use a biotransformation / fermentation to help really bring out the hops characters.
  5. Fermentation and Biotransformation: Once you have your hop wort/water chilled down to 18 - 22°C (64 - 72°F) rack off into the fermenter with the hops from the whirlpool/hot steep and add the remaining 70g of each hop as a dry hop and pitch the 1 x 11g of LalBrew® Pomona™ Modern Hybrid Yeast and leave to ferment for 2-3 days. There are some small levels of sugars in hops and you will find some small levels of activity.  Do not leave past 3 days or grassy characters might develop.  After 2-3 days cold crash and rack off into your keg or bottling bucket for optional flavouring and carbonation.
  6. Adding some Flavour - Blavour or Vlavour:  We have included 20g of our popular natural flavours: Blavour or Vlavour for you to amplify the hop combinations classic characteristics.  Use these if you like or simply use them to flavour some carbonated soda water - one 20g sample will flavour 19-20L Keg of Soda Water on Tap as well!  Add your Blavour or Vlavour post the cold crash and racking off into the Kegerator or Bottling bucket.  They do not contain sugar and will not cause any refermentation.
  7. Carbonating and Serving: Hop Water really should be in the 3 to 4 volumes of CO2 range to taste like what you are getting in commercial canned examples. So depending on the temperature of your Hop Water you will need to pump that regulator up to 30+ psi. The tendency of most would be to reduce the pressure and serve it around 12psi or so. What will happen though is over time that highly carbonated water will start to taste flat as the CO2 in solution equalizes with it’s new head pressure. So be sure to keep it on a separate higher (30+ psi) line to keep tasting delicious and refreshing!  If you are bottling you are going to want to double your normal carbonation drops, sugar additions.  If you bulk priming you are looking at around 240g of Table Sugar for 19 Litres of Hop Water.  Use a Bulk Priming Calculator to dial in your carbonation levels if you are bottling or naturally carbonating your Hop Water.
